Carmen’s Restaurant at the Top of the Bridge Hotel boasts a new contemporary elegance majestically framed by its signature unparalleled panoramic views of the Intracoastal and Atlantic Ocean as it celebrates its long-standing position as the only Dinner & Dancing ala carte restaurant in South Palm Beach County with a variety of culinary introductions this month.

A new Happy Hour experience featuring a “small plates” menu and ocean view living room seating now starts off Wednesday to Saturday evenings from 5 p.m. to 7 p.m. A new season of a la carte dining is then served up from 5 p.m. to 10 p.m. featuring innovative ala carte and prix fixe culinary creations presented by Executive Chef Dudley Rich. Live entertainment featuring the talents of Michael Masci, Carl Padilla, and A.D. Smith begins at 7 p.m. A value priced “Sunset Special” prix fixe menu is offered from 5 p.m. to 6 p.m. for early diners.

To create his array of new appetizers and entrees, Chef Dudley draws on his West Coast roots for his popular American California Continental-style masterpieces with French, Italian, and Japanese influences and a strong emphasis featuring “fresh vegetables” as the centerpiece of his culinary designs rather than solely showcasing the protein as traditionally done. He does this by transforming a diverse selection of ordinary vegetables (sometimes a total of six per plate) into blissfully memorable treats, with each item prepared and paired as a bold, flavorful compliment to each other.

Appetizers, ranging in price from $7 to $17, include Eggplant and Goat Cheese Ravioli, Jumbo Lump Crab Cake with Whole Grain Mustard Buerre Blanc and Mico Greens, and Bacon Wrapped Sea Scallops with Celery Root and Apple Puree. Entrees, ranging in price from $24 to $45, include Mustard Crusted Fillet of Salmon with Asparagus Raft and Tomato Basil Fondue, Roast Chicken Breast Provencal with Basil Polenta and Glazed Carrots, Grilled Minted Lamb Chops with Sweet Pea and Mint Risotto, Harris Ranch Certified Filet Mignon with Truffle Butter, and Lobster & Crab Stuffed Shrimp with Angel Hair Pasta, San Marzano Tomatoes, and Fresh Basil. A Prix Fixe menu offers choice of three appetizers, three entrees, chef’s daily dessert selection, and coffee for $38.95 plus tax and gratuity.

Carmen’s new “small plate” menu offers “small bites with large flavors”. It includes a Chicken, Bacon, Blue Cheese Croque with Cayenne Mayonnaise; Smoked Trout and Avocado Dip with Pita Points; Shrimp and Jalapeno Jack Cheese Strudels; Seared Ahi Tostada with Wasabi Cream and Asian Slaw, Beef Carpaccio with Arugula and Shaved Parmesan; Warm Crab, Artichoke and Spinach Dip with Crusty French Bread Slices; Mediterranean Bruschetta; Shrimp Cocktail and Blue-rugula Sliders with Mustard Glazed Onions, Blue Cheese and Arugula. Prices range from $9 to $17; during Happy Hour “small plate” fare is half-price.
