Very Berry Strawberry Syrup

Here’s a simple strawberry syrup, good over ice cream, pound cake or over a
nice slice of one of Rima’s Cheesecakes, available at the Ocean Avenue Greenmarket Café.


                  Very Berry Strawberry Syrup


                  2 pints hulled, washed strawberries

                  ½ cup raw sugar

                  ¼ of a vanilla bean, mashed

                  2 tablespoons strawberry schnapps or other fruit liqueur

                  small pinch salt

                  Slice berries vertically into a medium glass bowl. Add other ingredients and stir gently with a wooden spoon; berries react to metals. Stir until sugar is
mostly dissolved. Cover and refrigerate overnight, or up to 1 week. Makes about
2 ¼ cups syrup with berries.
