Thanksgiving Leftovers Quiche


 1 deep-dish pie crust, thawed

 1 cup leftover cooked ham, cubed (or turkey)

 2 tablespoon green onions, minced

 2 tablespoon butter

 5 ounces fresh spinach, washed well

 4 tablespoons leftover stuffing

 1 cup mozzarella cheese

 8 eggs

 ¼ cup milk


                  Preheat oven to 375 degrees.

                 Fit pie crust into 10-inch deep-dish pie plate or quiche dish.

                  In skillet on medium heat, sauté green onions and ham (or turkey) in butter. Once onions begin to soften, add spinach and stir until cooked or heated through, set aside.

                  In a mixing bowl whisk eggs and milk together, add meat mixture and remaining ingredients, pour into pie shell and bake 30-40 minutes or until eggs are set.

                  Makes 4 servings.

                  (This dish freezes well.)
